Have some wild boar ribs that I would like to smoke this weekend. They are very very lean.
Use a Masterbuilt electric smoker that I pretty much only use to smoke fish.
Need some help with recipes and temps and times. Do not own a temp probe.
Did I mention that these things are really lean.
