Well, yesterday the wife and I celebrated our 21st wedding anniversary (yes, it is to each other - lol.) I asked her where she might like to go for dinner and she said, "in our back yard to the smoker." I am now marinating two pork butts and at 6 a.m. start tomorrow both go into the H2O Electric Smoker, hickory chips and all. One is simply coated with a light amount of salt and pepper, and the other is dry-rubbed with a salty/pepper/thyme/sweet Spanish paprika mix. She is definitely a woman who is constantly after my heart! I'll report back on how they turned out. Terry Roadkill beware -- I have a smoker!
