I have smoked 4 times with it and never had an issue with it heating up. I ran out of fuel and bought a new tank. The thing won't get above 203. It is a little windy in Utah today but nothing this thing shouldn't be ale to handle. Do you think it is the new tank that is causing the issue?

Close the valve on the smoker, close the valve on the tank,  SLOWLY open the valve on the tank, you may hear a click..... repeat if necessary....  There is a safety mechanism in the valve that won't allow propane to flow normally if it is opened to atmospheric pressure......   That is why the valve on the smoker needs to be closed when SLOWLY opening a new style tank......

Also check that there are no Spiders are taking up residence in the Venturi tube. They can get in through the fresh air slots. The flame will be very Yellow with it lit...JJ
