I'm going to do a Cuban-ish pork shoulder, poked deeply with a broad knife then rubbing a paste of salt, garlic, and scratch mojo sauce deep into the cuts. Marinate overnight then smoked with peach wood to 203-205F IT. Rested, pulled, then served on bed of fried bananas and plantains then draped with smoker roasted onions and peppers. Will probably eat it as is or with flatbread or tortillas. Got the idea off Man vs Food today. I've been wanting to try something new with pulled pork and this just tickled my fancy.
