It's been awhile since i posted, but i haven't had much luck smoking with the Binkman smoker I bought, I realize there is a learning curve, but I had used a charcoal grill to do some smoking. Yesterday I bought an 8 pound whole pork shoulder. I converted my charcoal grill into a smoker. I covered it in yellow mustard and used a dry rub of brown sugar, white sugar, kosher salt, cinnamon, chili powder, paprika, and garlic powder. after a couple hours I let the shoulder get to room temperature then put it on the grill about 9pm last night. For the first few hours I used a mop in a spray bottle, a mix of apple juice, apple cider vinegar, and vegetable oil. I woke up about 7am, double wrapped it in foil and let it smoke a couple more hours. I brought it in the house, let it rest for an hour or so and started pulling it apart. I took a little nibble and OMG....it was freaking delicious. My wife isn't a fan of pork, but she tried a piece and couldn't believe how good it was. I took a picture of the mid process, and after it was pulled apart. i forgot to take a pic of the pre-pulling though. :-(
