Last minute question.:....doing a 75 lb hog, not splitting spine to butterfly him. If I leave him stomach side down the whole roast, will he come out fine? Should I start him back down first and flip him half way through(is it recomended to flip the pig? Will he fall apart or tear the skin doing so)? I really want nice crispy skin. Using a homemade grill with lid and fire boxes along the sides.....going combination charcoal and Apple chunks..... Thanks in advanced!

I did a 135 pounder a few years ago butterflied with the cavity down - he was jammed into the cooker so we couldn't flip him and he took 2nd place at the Douglas, GA, NBBQ News Best of the Best. So, I'd say go for it. Keep the heat under control.

He did come out in big sections!!

I then cooked an 85 pounder in my smaller cooker and cooked it skin side down. Wound up overcooking him a bit.

Haven't forgotten the qveiw....will get all pics I have on here sat or sun....again, not as fancy as some I have seen here, but I think its a good time line from start to finish....oh yeah, it came out great! Moist and DELICOUS!.....can't wait for my next one! Only thing that didn't "meat" my expectations was the skin and ears.....way to tough/dried out....gonna go with a spray/basting next time........

) and was having issues getting all the pics to upload through my phone. But here ya'll go....again no fancy layout, didnt put it n a platter with garnish or anything. Cooked him, rested him and served him all from the grill.....Thanks for the tips from everyone. Again I couldnt be happier for my first hog. Have enough meat for a good meal of pulled pork and just grilled up the ribs last Sat, awesome....And my cousin was thrilled because I boiled down the head so she could have the skull(she's an artist....
