I'm cooking a whole hog Friday/Saturday for my sisters wedding reception. Picking it up Thursday from the butcher, it will have been scalded, scraped and split, feet and head removed with jowls still attached at neck. Gonna give it a good rub down with some store bought bbq rub and store it in our walk-in cooler until it's time to go on the cooker. This will be my biggest yet! I'm super excited and very happy to be given the opportunity to do this. I'm going to mop it every so often and will try to snap some pics along the way. We are going to pull & slice it, pan it all up with finishing sauce, and my grandma's homemade bbq sauce will be around for everyone to enjoy.
