I'm cooking a whole hog Friday/Saturday for my sisters wedding reception. Picking it up Thursday from the butcher, it will have been scalded, scraped and split, feet and head removed with jowls still attached at neck. Gonna give it a good rub down with some store bought bbq rub and store it in our walk-in cooler until it's time to go on the cooker. This will be my biggest yet! I'm super excited and very happy to be given the opportunity to do this. I'm going to mop it every so often and will try to snap some pics along the way. We are going to pull & slice it, pan it all up with finishing sauce, and my grandma's homemade bbq sauce will be around for everyone to enjoy. I'm stoked...Stay tuned...and enjoy some popcorn and beverages...

 and waitin' for the show to start.  Are you planning on injecting the hams and shoulders with anything?
 
I got some friend that do whole hogs all the time and here is a link where they got their injection recipe.  Tastes really great and I've use this recipe in smaller quanities to inject shoulders for pulled pork.  Yeah it's a little more work but it does make for a nice change up on flavors and beats the heck out of using Italian dressing.
 
Thanks Dutch, we'll give it a shot! I actually found that site a week or so ago, I think from a link on here. I wasn't sure about the rub, but now that I know it comes highly recommended from you, I have no doubt it will be great! Thanks again.
