Whole Brisket From A Cow With Baked Potato, Garlic Mashed Taters, Strawberry Stuff & Special Brownie

  1. I hadn't done a brisket in a while so I figured I'd keep my eyes open for one.


    I came across some & after checking them out I picked this one.


    It was a nice 14 lb. specimen.


    I separated it.


    Then gave it some rub.


    Had to take a quick snack break while the AMNPS was getting ready...


    And into the MES - running oak & cherry.

  8. Here is how it is coming along.


    I took this pic when I put the probes in. Things are coming along nicely -  I'm in the stall now...
     
  9. I decided to make some special brownies to go along with this - haven't had them in a long time  [​IMG]

    Jeramy!!!!!  Special Brownies!!!!!  Oh no...are you going to add a "certain ground herb" into the mix?

    Do you weight the ingredients or estimate the brownie thickness to calculate the proper amount of "cure" to add to the brownies? Or is it added to the wet brine instead?
     
  12. Ha!  [​IMG]   These aren't those kind of "special" brownies Kat but they are still good  [​IMG]   Actually I should go check on them!  [​IMG]
    Actually you're not far off at all as stuff is added to both the wet & according to amount of brownie [​IMG]

    Covered them In rub & waited a couple minutes.


    Then added a little more rub.
