Which way is best

  1. Is there any advantage when making summer sausage to mix meat and spices and let set for 24 hrs.in the fridge or fill casings and let set in fridge for 24 hours?

    Just my opinion, but I let sticks and SS sit overnight in the fridge.  I think it lets the flavors meld.  I don't have proof.  If your mix contains a cure, I think it gives it time to do its thing.  Just 2 cents.

    If well mixed, there is really no difference whether the sausage rests in bulk or in casing...JJ
