I know IBP was bought by tyson. The question is I am going to open a rib shack and would like to know where i can buy good ribs retail. I know lots of compition guys buy there ribs from local meat markets but that can be pricey.
dont know where you are from, but Costco has always had great baby backs at a very reasonable price. Dont know about volume discounts but the quality is there.
IBP or swift seem to be the best, and quite consistant as far as size and quality. I would approach your butcher and see if he would consider supplying you with a contracted amount each week/month for a certain discount. He would make out with a better discount from his supplier, and as long as he didn't get stuck with 20-30 cases some week that you decided to go elsewhere, it should work well.
remember, the finished product can only be as good as it started out. If ya buy discount meat or inferior stuff from discount stores, the end product will suffer.

I think ya know what I mean. If you wanna open a rib shack, you want to have something that folks will drive the extra distance for and pay decent money for! I wish you luck with your endever!
you may contact meat packing plants neer you are at least in Texas. Swift will sell meat out the door if you buy what they call a "combo" and is 200# of ribs at a about 2.45#, if you buy a case at 50# its around 3.10#. i have only bought case's, and quality/size varied enuff i could tell, but was good. these was Baby backs
Sysco Foods is a wholesaler that 2 friends of mine works for. Last year I bought 1 case of BB's for 3 dollars a pound. They were flash-frozen in a plastic bag in a waxed box. Maybe they have better prices in quantity. Good luck.
I'd check with meat wholesalers in your area and see what kind of pricing you can get. But ya gotta watch some these guys as once they get your business they'll try and deliver lower quality product to make a buck for themselves.
