where do you put the wires for the internal meat thermometers????

ok just got my UDS built and seasoned.  I still have one thing to figure out.....how do you get the thermometer probes into the meat?  I could jsut rout them through a hole in the top, but that would make removing the top a royal pain in the rear.  I also think that if I jsut sandwiched them between the lid and the smoker I would be letting to much air in.

so what do you do? 
 
I wrap my wires carefully in foil and gently lower the lid on them.  No problem on Acurite probes.  Did have one Maverick probe go south on me, but all seems OK now.

On the WSM, I cut a small slit in the top edge where the lid meets the body so I can remove the lid, remove the grill with meat and probes installed, and replace lip within seconds.

I drilled a couple of holes in the side of the drum up near the top just big enough for the probe to slide through. Did the same thing on my Master Forge Gasser. The holes are not large enough to affect the temp.
