what would u do with a 16lb pork leg roast ??? I was given it as a gift and am not quit sure what do do with it. I think it is to big to smoke the whole thing. was thinking of making about 10lbs of it in to sausage when i get my grinder from cabelas in a week. I am open to suggestions thanks !!

Please do not make this into sausage, if you can help it. If you have a smoker/ grill large enough to handle it, barbecue that puppy, cuz that's what you need to do. Not smoke it, not grill it, barbecue it Southern style low and slow with a whole lotta love!

it might fit in to my mes...but it will be close. i am planning on a uds real soon but i would want to practice on it before i through that big hunk of meat in it. so if you can steer me in any direction i am up for what ever. and i guess i won't be making suasage out of it. and enlighten me on "bbq southern style" i'm not sure what ya mean but i am curious.
and yes it is a whole hind leg. i mean this thing is the biggest peace of pork i have seen besides a whole pig...lol

No worries though, becuase you have the best for your situation. It's boneless. Should fit in your MES no?

What you don't wanna do is grind this puppy into sausage. You have a keeper even if you are going to put it in the oven. Trust me.

Once you find out if it'll fit in the MES, that'l be the starting point.

And, congratulations on whatever it is happened to get you such a gift. You must thank the folk(s) that gave you that!
 
Cut that PUPPY in halves and get er smoking. Maybe try each half with a diffrent rub/injection. Or you could send to me and I will try and help you at my place.

What you need to do is bring that hunk to central Oklahoma and let Ol' Maude take care of it. She loves big meat!
