Hey all

It's been awhile since I have been on this site, seems like it got pushed to the wayside with life and such!  Anyways, I started smoking about 6-7 months ago (I don't know what my join date is, but that is when I got my 18.5 WSM), and have only done pork and chicken.  I believe I have done pretty well on both, heck, even smoked about 50 lbs for my fiance's mother and fathers 50th.  Now that was interesting!

Anyways, I've never done any beef product on my smoker and am looking for ideas, input, suggestions, and tips in doing so.  Brisket has my attention, would you do the point and flat, or buy seperately?  Prime Rib would be tasty as well, I wish I had a slicer to make my own roast beef!

I'm very partial to Prime rib, it's my favorite thing to smoke & this is the time of year they go on sale. We just bought 8 of them at $5.79 per pound. 
 
We usually get the 2 bone size and it generally runs about 4 to 5 pounds. It's plenty for 4 people or we eat it for 2 dinners.

I would personally recommend that you smoke a brisket. It's a big hunk of meat that takes along time to smoke. Now that gives you alot of time to mess up a few times and will leave you plenty of time to fix anything that you might do. So it could be a very good and forgiving hunk of meat with great rewards to. So there are my pennies.
