Looks and sounds delicious. Did you make the whole this on the old stove? And I'd never heard of Tasso so I had to look it up.

What in the world is Tasso? It's lean strips of boneless pork which are marinated in a special seasoning and then heavily smoked to create a Cajun delicacy. Tasso is sliced or diced into small pieces and added to beans, vegetables, gumbos, or red beans and rice to add flavor that's out of this world. Give Savoie's Tasso a try!
 
Well I know what tasso is and what to do with it. So all I need to do is to make some and then we can make some of those dishes like Gumbo, Red beans n rice, Jambalaya ans anything cajun. I just love that food group.

Tasso = Cajun Gold!

Good stuff. Always bought mine, but have seen some home made versions here, so will try that soon.
