What to do with some sausage

  1. I bought a ton of sausage to try out in my WSM. Now in true fashion I don't want to just throw everything in there and smoke it, i want to experiment with something. I thought I once saw in here were people hard boiled an egg, wrapped in sausage then wrapped in bacon, but I don't know what this is called or where to find it. Ive debated some other ideas, such as take some cheese roll out the sausage and roll it up with something in it. I also have about 5lbs of ground beef.

    You must be talking about ground sausage  and not sausage stuffed in casings?
  3. Some are in a casing but I'm going to take them out and wrap stuff with them

    Your choices are unlimited. You can put anything you want in the middle & wrap it up in bacon. It will be good no matter what you choose.

    Unless the sausage has cure added, you want to be sure to hot smoke it.

    Your egg thing is called a scotch egg. An egg inside sausage and then wrapped with bacon and rubbed then smoked.
