I just took a 6 lb yard bird out of the MES. I'm wanting to pull the meat off it tomorrow and make something with it rather than cutting it up and eating it straight. Anybody have any ideas? I'm thinking about making an alfredo sauce and cooking some spaghetti and vegetables then tossing in some of the meat.
 
A lasagna would be great! Another member BDSkelly just posted a great gumbo cook that would be awesome as well!

Chicken salad is what we do with the leftovers.

Or you can make it into a spread in the food processor.

Chicken fajitas or quesadeas would be good too.

Al, what is your recipe for smoked chicken salad?
We really don't have a recipe.

Just some chopped celery, chopped onion, Hellman's, S&P, and a little paprika.

Sometimes we add a couple of chopped hard boiled eggs.

And of course the chicken cut into small bite sized pieces.

I typically just small chunk up or shred the chicken and top a lettuce/vegie salad with it.  Chase it with your favorite dressing but I'd stay clear of cheese dressing.  Something more like a light Italian.  Don't want to coverup the smoked chicken flavor.

Another idea is to make some Chicken lettuce wraps.  If you google "chicken lettuce wrap" and then hit the google image button, you will see lots of ideas.

Thanks everybody. In the end, gumbo won out. It was great with the chicken, some Prasek's sausage, and some Gulf shrimp. Froze some tonight.
