My Wife had her B-day this past Friday (1/6) and wanted me to cook for her (whats new?) on Saturday (1/7). To my surprise she asked for ribs (didn't like them until I made them for her) I guess she is hooked. Along with the ribs she wanted me to smoke some sausage (her other new favorite) with sides of collard greens, mac & cheese, cornbread, various grilled veggies, grilled romaine salad and smoked caramel apples with ice cream (I saw a post on SMF for this and I love it, sorry no pic).

My pictures are limited because part of the deal was I have to hang out and get saucy with her and her friends and not spend the whole time cooking so I just took pictures when I remembered and I wasn't being yelled at to "grab us more beer", "make us more shots", etc.

My wife's cousin re-did my grandmothers patio (as per her request) to give me more room for all of the cooking I do there (she called yesterday to tell me she is buying new patio furniture too). My family (especially my grandmother) has had a very tough time these last couple of months with 4 funerals in the past 4 months (Sept, Oct, Nov, Dec, praying I make it out of January without another death). She lost her fiance at the end of Nov (unexpectedly) and her oldest son (my uncle) early Dec from a 3 year brain cancer battle, so she hasn't been leaving the house and having fun like she used to but she loves it when I come over and cook (for the food and the company). This weekend was really good for all of us seeing as my g-ma hasn't had an appetite in weeks (eats only cause she knows she needs it to live), ate the whole plate (more then I ever thought she would eat) I gave her to the point that there was only a rib bone left on a clean plate and she had a huge smile on her face while telling me about her non appetite and this was the best meal she has had in a long time and that she hates ribs but really liked the ones I made, etc.

Anyway, enough of the venting and on with the show!

Only picture I have that shows a little of the old patio

Sausages (Hot Italian, Chorizo, Brats) and Small Spam Block (I ate this stuff as a kid but couldn't eat it as an adult, I kept hearing SMF people say its good if it's smoked so I spent a little over $1 for the small tin, threw rib rub on it and smoked with the sausage, sliced it into small bite size squares and made everyone taste it without telling them what it was.......haha, everyone liked it and couldn't believe it was Spam, you folks made converts out of me and a bunch of my wife's friends, weird texture but pretty good)

Collard Greens (it was from a can and tweaked a little)

Mac & Cheese (I used Shells & 4 Cheeses- mild cheddar, extra sharp NY White cheddar, Mozzarella, Parmesan)

Epic fail not getting a fixed plate with the salad, grilled squash and sweet potato wedges & honey corn bread muffin in addition to what you saw, also no picture of the smoked apples with ice cream.

Since the Spam is technically cooked I just threw it in with the sausage which I smoked for maybe 2-3 hours (can't really remember).

I have to get some BBQ mats so she doesn't freak out cause I sure was after I put it back on the patio, like if I ruin this thing she will kill me. If it was my patio I wouldn't care about a little stain here or there, it's outside.
