What Next?

  1. Ive been cold-smoking my first-ever slab of homemade bacon today...what do i do next? slice and vacuum pack immediately? wrap in saran and mellow in fridge for a few days? zip lock for a few days before slicing?

    I wrap mine in butcher paper and let it dry out some in the frig for a couple days, then slice and freeze, or freeze in small slabs for slicing later

    Let it sit in the fridge for a couple days before slicing or freezing
