Ha! I hear you there, isn't that always the case. Right now I'm mostly just using the Grill Daddy Pro with the grill on high at the ends of my cooks. The grates aren't clean enough for me though. I may try the ammonia bag method one day. What's your method?
I have one of those large, flat rubbermade bins that is designed to store stuff under a bed. I just fill that with 3 inches of hot water and some dish soap and let the racks soak for 20 minutes, then wash with a cloth rag. I used to use those green scrubbers, but they destroyed the chrome finish on my racks. When I'm doing a new cook, I always heat up the racks in the smoker (I use propane) to sanitize them before placing food on them.
