Since it is prime season to make sausage I thought it would be interesting to share pictures of what the SMF members sausage making faciltys look like.
We do all of our stuff in the garage (wish we had running water out there), here are a couple pics of the garage set up for making sausage this next coming weekend. In the pic's you can see I took them while my wife was weighing out hi-temp cheese for each different sausage we are making. Also is our 25 lb Sausagemaker stuffer, #32 meat grinder powered by a 3/4 horse motor, 44 lb meat mixer and we also have an oven in the garage for finishing sausage after it is smoked so we can switch to the oven to finish and start smoking another batch in the smoker.
This year I am also making up a 25 lb batch of venison bacon for a friend using elk instead so that will be interesting (I have used venison and buffalo before, but not elk). He brought me the meat tonight and left us 4 additional elk roasts for ourselves so I may need ideas from the SMF crew on how to make them?
Another friend purchased a Bradley smoker and wants me to season it this weekend and smoke a little meat in it, so that will be interesting as I have never used a Bradley before.
Besides deer hunting opener, this is my favorite weekend of the year !!! I am really looking forward to seeing other members set ups for ideas for ours.
