What are you smoking today?

    We are having our  "4th on the 3rd" neighborhood party today. This morning I fired up the WSM for some pork shoulder (pulled pork sliders) and spare ribs. What's on your grill today?

    Nothing today, but tomorrow.

    Nothing smoking today...I already smoked the 13 lb. brisket I'm taking to a family gathering tomorrow.  Today I have a couple of fat ribeyes that I'm gonna grill on the Weber Kettle for dinner.

    Second attempt at pulled pork as I am very new to the smoking scene.  Turned out really good and can not wait to dive in later this afternoon!

    Actually my folks wanted steaks for the 4th. I've never done a reverse sear before but that's what I'm going to do. My folks all like their steaks done a little more than MR but not med. I was going to do them on my kettle at about 225-250* to an it of 125* and then sear them to about 135* and rest for about 15 minutes.

    Does anyone disagree with this and what should I do different? Thanks in advance. Joe

    I thought MR stopped at 145-150 range medium is at 155-160.  Depends on the thickness sometimes.  Not sure about the reverse sear part.

    10lb pork shoulder today, some asparagus on the Weber when it gets closer to done :)

    This weekend I am going to be smoking a 38 pound whole alligator. I have done some research and found one place telling me 17hrs at 230. Another said 5 hrs at 250. Those r both pretty different times. Anyone ever smoked a gator before??? Open to any ideas!!!

    Whole Alligator? Can't wait for the q-view!!

    My steaks, (2 rib eyes and 4 porterhouse) were great. Good color, good texture and awesome flavor. The only thing that could be better is that they were a little done. They were only 1-1/2" thick and once they were at 125*, they shot through the sear to about 137* very quickly.

    But, I promise that this will not be the last time for me to do a reverse sear. Joe

I had a couple bags of rib tips in the freezer so yesterday, I made Peach Bourbon Glazed Rib Tips Sandwich (for me) and I shared my rib tips with my neighbors.  I didn't feel like burning up on my patio cooking on the grill.  So I oven roasted my rib tips. they were fork tender and delish - just melted in my mouth!  Here's what I shared with my neighbors.
