I'm looking for some venison summer sausage premixed seasonings that have been used with good results. I plan on making some using the Len Poli recipe I found on the forum, but would like to try a premixed seasoning so I can compare the two.

    Any input is appreciated.

I'm going to try Len Poli's recipe for the first time as well. I'm going to follow it exactly except the red wine. We going to make this 1-12-13. Please post any results or improvements. I'll do the same.

Thanks MossyMO, I will have to give that one a try. I'm also looking at the AC Legg seasonings, I've seen them mentioned here quite a bit.

This place is right here in the Lonestar State!  http://www.clifcospicesales.com/sunshop/

I use their spices for all of my sausages.  Family owned, great people and if you get some dried jalapenos to mix in with it, along with some cheese, you will have people begging for more!

      Good luck!

Tgil, thanks for your input. I will definitely give them a try!
  8. PS Seasoning has the largest selection of sausage seasoning I have seen I am making the spicy garlic summer sausage tomorrow I am going to add cracked black pepper to it a little red pepper flakes and some fermento will let you know how it turns out

Loggie, look forward to hearing your results. I have not yet made mine. Still looking around and trying to decide.

LEM Backwoods makes an excellent kit that you can get at Academy. Just made some for the first time and it was the best I ever had.

Comes with everything you need except meat.I smoked mine for 2 hours then put it in the oven @ 170 for what seemed like forever (about 24 hrs) because you have to get the internal temp to 165.
  11. Turned out really good I added some cheese to it but the taste the fermento gave it was not what I was looking for going to do a smaller batch with buttermilk
