Time to get serious about barbecue! I moved here (Kitsap Peninsula, across Puget Sound from Seattle) 5 years ago from Kansas City, where good barbecue is as important as good coffee is up here. Not a lot of BBQ here in the northwest.
I was a certified barbecue judge with KCBS for about 20 years and decided it's time to dive in to the cooking side of the sport. I have a terrible time getting my fire to stay at a constant temp, so my results are disastrous so far. Today I'm brining some chickens according to Jeff's instructions on this site, and will try again to get my smoker operating the way it should. I can't afford a fancy one - just one of the old stacked cylinder style and then another small half-barrel smoker with an offset firebox.
