I am so excited.  I ordered the Lang 36 today and I cannot wait to get it in and get 'er going.  I have ribs, a brisket and chicken all waiting for it to arrive.

The question I have is that when I get the fire going am I supposed to use charcoal with wood chunks on top and the firewood on top of that? or Just go straight firewood...or What is the best way to use this thing?

If you can get wood reasonable I would go straight wood. Cut the logs about 12-15" long and split them to about the diameter of a magnum beer can and you should be good. Using the smaller splits you will have to add wood more often but it keeps temps more consistent and keeps the smoke nice and thin

I usually lay a bed of finely split wood on the grate, fill a chimney with charcoal, get them burning real good and then lay the burning charcoal on top of the "tinder".  I will lay a couple more slightly larger splits on top of the coals and then the full size splits once the fire gets going.  I usually don't use any additional charcoal after that.   Another thing you may consider is placing some of the larger diameter splits around the outside of the coals so they kind of hold everything together and get started burning early.

Don't forget to do a good cleaning and cure before you start cooking.  I washed out a lot of small shards of metal and grindings.  This first good solid burn also gets rid of any oils they used with the cutting tools or drill bits.  If you need a bit of guidance on curing your smoker let me know but plan of having a good supply of wood for this first burn.  You want to let everything get good and hot, expand, snap, crackle and pop before you begin curing.

Congrats on the baby Lang, if you like it half as much as I like mine you made a great purchase
