First ever add to a forum.  Life long smoker...my momma didn't raise no quitter.  Haven't met a smoked meat I didn't love.  Brined a turkey the other day, rubbed it tonight, going to put it on the smoker tomorrow and share it with great friends tomorrow evening.  What is your favorite wood to use on poultry?.  I live in Saskatchewan Canada (home of the Grey Cup Champion Saskatchewan Roughriders), own a Bradley smoker and love to smoke and BBQ.  I can't stand it when someone says to me in April "well, just had my first bbq of the season"...WTH, BBQ and smoking goes on year round at my house...just takes a little long in -40 degree weather that's all.

In alphabetical order on poultry I've tried apple, cherry, hickory, mesquite, and pecan woods.  I have a huge oak tree in my backyard but the last oak that has been cut from it is still aging so I haven't tried it yet.  My absolute favorite wood on poultry is hickory.  Second favorite is mesquite.
