i use an off set smoker from a hollow smoke system. still a rookie but learning fast. family likes my rib still little stubborn with a steak but me too nothing like a good favored steak. working on advancing to smoked pulled pork and briskets.

Welcome to the forum!
Pulled pork is more forgiving than brisket. Butt would be an easier cook than brisket.
 
Welcome from SC. I know you will like this site. There are lots of folks here that are always ready to share their ideas and tips. All you have to do is ask. Butts are very user friendly as are Chickens. Look up a thread on Spatchcocked Chicken. It's very easy to do and cooks very well. Good luck, Joe.
