i use an off set smoker from a hollow smoke system. still a rookie but learning fast. family likes my rib still little stubborn with a steak but me too nothing like a good favored steak. working on advancing to smoked pulled pork and briskets.

Welcome from SC. I know you will like this site. There are lots of folks here that are always ready to share their ideas and tips. All you have to do is ask.
