Well the ham and turkey is gone. I smoked my favorite cut of beef, Tri Tip. I guess its a california thing. I picked up the tri tip at my local costco. Seems to be the only place in texas , that has it on a regular basis. Much easier to find in california . I smoke for a 145 IT. Here are some pics of what it looked like. Served it with a homemade salsa and guacamole. I roasted the tomatoes and jalapenos after I had taken the tri tip out.
