This past weekend's feast included a pork loin stuffed with Stove Top stuffing, lardon, onions and mushrooms. I decided to throw on a rack of back ribs as well.
I fried up some homemade lardon, threw in some finely diced onion and mushrooms and mixed that together with some stuffing mix. When cool, I spread it out on a loin I fileted, rolled it up and wrapped it in a homemade bacon weave. Ribs were prepared with a coat of Sriracha sauce and my homemade rub. Ribs went on the Rec Tec at noon at 225. At 2:00 I put the loin on and left the ribs (no foil). Started checking rib bend and loin temp at about 4:30. Ribs were almost there and the loin probed at 125 with my Thermapen. I put a very light glaze of sauce on the ribs and let them go for another 30 minutes. Pulled the ribs off at 5:00 and let them rest in some foil. I found the loin temp to be at 140 and took that off as well. I finished the loin under the broiler for a few minutes to crisp up the bacon and it was time to eat!
