Well I picked up a rack of spare ribs at the local butcher for .89/pound and am off for my first rib attempt.

Planning a 3-2-1 method if Ivan keep the weber low enough. Currently hovering in the 235 range do time will tell.

Rubbed with a salt,cayenne, brown sugar,pepper concoction that I made.

Not planning on touching them for 3 hours but we will see what the temp does.

One question, if I don't mop/baste will I dry them out?

Just under 3 hours and I pulled them to wrap in foil and added some of my son's motts for tots apple juice. Hopefully that works.

Couple of pics. Grill has done pretty well. Spiked to 265 and is running 280 after having it open but will get it back under 250 hopefully pretty quick.


 
Off they come. The wife thinks they rock so they must be good. Gonna rest them for a bit and then dinner time.

Smoke ring could have been better but a solid first try.

For charcoal I using lump but there are a few kings ford briquettes mixed in to get rid of them. 90 percent grove charcoal lump. I am a big fan.
