So far, my main goto smoker is my masterbuilt smoker. My only flaw for this smoker is, the temperature is limited to 275. Actually, that's not bad for a smoker because I normally smoke btwn 225 - 250. But I've been kicking the idea of the Weber Smokey Mtn Cooker for a bit.
My only concern is controlling and keeping the heat constant. If I'm doing a porkbutt which takes on average 12 hours, how do I keep the temperature consistent on a smoker, such as the Smoker Mountain?
And, is there a limit to the min and max temperature of this unit? I'm interested because I would want to coook a chicken but I prefer chickens to be cooked at 300 - 350 degrees?
And, is is really possible to keep a charcoal grill/smoker burning for 12 plus hours or are you constantly adding fuel?
Thanks!
