I have been working on getting my smoking hobby up and running for some time, researching and reading what I can find. I am getting close to retirement from the daily grind and  have been interested in curing and smoking hams, smoking bacon, lets be honest...smoking pork!

  Also a try at smoking cheese is in the back of my mind.

  I have lived here in Catemaco, Veracruz, Mexico for going on 12 years, renting vacation apartments and running a small RV park. 10 miles from the Gulf of Mexico and about a hours drive where, on a map, Mexico gets really skinny . The isthmus. You can actually drive from the Gulf Coast to the Pacific Coast in an afternoon.  Our area is known to be the most northern edge of the rainforest stretching through central America. Humid, generally yes. Temps range low 90's as a high during the summer, upper 50's as super cold nights in the winter.

  Woods for smoking, barring Amazon.com, COULD be allspice, almond, coffee. There is citrus like oranges and limes but I don't know if they would be so good smoking.
