Just curious, but does anyone know if the peelable 26mm cellulose hot dog casings are smoke permeable?  It says on their website they are for smoking so I would presume they are.

Reason I asked is I'm considering making some "magnum" sized skinless snack sticks which will be smoked in multiple stages and would be peeling these casings off at the end of the process (if they are indeed smoke permeable).  If they are not, it sort of defeats the idea.

I'm planning on ordering some of these as well.  I have a call into Walton's now and am waiting for them to get back with me.

I was told that before they would commit to me that they are permeable, they wanted to double check with their vendor since this is a new product for them.

As soon as I hear back, I'll reply here.

Just talked to John at Walton's.

He said that the cellulose casings are smoke permeable, but NOT as permeable as collagen casings.

So, he stated that the manufacturer recommended to "start with a heavy smudge for the first hour to 2 and then finish with normal smoke at normal temperatures".

I'm ordering some next time I order supplies and will try a length or 2 of this along with collagen and see how it goes. It'll be a couple of weeks though.

Cool thanks.  So in stead of smoking for the first couple of hours, just let the smoke run longer.
