Does anyone have any experience with converting a small walk in cooler into a smokehouse? Can the insulated panels handle temperatures to 250 degrees.
 
Hello.  Welcome.  I see this is your first post.  Please take some time and swing over to Roll Call and introduce yourself so that we may give you a proper "Hello".  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have, and pictures help a bunch.  As for your question:  If the insulation is polystyrene ( styrofoam ) I would replace it.  Just my opinion.  Keep Smokin!

Think about just smoking the meats at 160 or less.... If you need higher temps, use the oven in the kitchen to finish.... That's what I do... I'm smoking a turkey and it will finish in the oven.... you will need good air flow through the smoker... side wall exhaust vents so condensate does not drip back into the smoker.....
