Anyone ever smoke Wahoo? My brother in law caught a few off North Carolina and will be giving us some when we go down to see him in a few weeks. When we've grilled it previously I thought it was pretty firm and dry. Could use some suggestions on the best way to prepare it, maybe smoking is an option?

Wahoo is a quick cooking fish with firm white meat. It has a mild taste so season it so you don't overpower the fish. A good olive oil salt and fresh cracked pepper is all you really need. Cook over a meadium hot heat for 5 min on both sides of a 1/2 in thick steak and you will have some of the most delicious fish you have ever had. You could also try 1 tbsp of soy sauce, 1 tbsp of sesame oil, 1tsp of fresh ginger, and 1 clove of garlic. Marinate the steaks for 30 min then grill as above. Save the smoker for some tuna.
