Picked up a vintage KC Smoker on eBay this week.  It was missing the water tray, but it looks like a 9" pie pan will do just fine. We bought this unit after seeing it at an Airstream Rally this summer. It is perfect for camping.

Trying it out today with a 7 pound chicken!!!

It was delicious!  It had a slight smokey flavor, but not overwhelming.  We have been "smokers" for years having both  dry and wet smokers - ranging from charcoal, to gas -- our main smoker is large rectangular gas smoker.

This little gem is our first electric smoker.

The bird turned out very moist, and was falling off of the bone.  This was our first test and we had it in for three hours. I think that we may go with a bit less time and water  in the tray next time.
