  1. Folks,

    Not going to hit ya'll with too much text here since it's all in the video. We'll post more videos tomorrow as we smoke 'em up!

    First video: prepping the ribs the night before they smoke. Removing the membrane, applying the dry rub.

    This was my wife's first attempt as a videographer, and I have to say, I think she did a fine job!

  4. Very cool Sean.  I was getting into your wife's singing :)  Looking forward to the rest of the smoke.  What kind of wood are you going to use for your smoke?

  6. Hey guys had some technical difficulties this morning.  :( 

    First video is ready now tho!  [​IMG]

    This lump charcoal is hard to work with. Seems like it burns so fast & then when its out, my temps nosedive quickly. Thoughts? [​IMG]


  7. EJ, I cover the smokin' wood in the video, but just in case you didn't want to watch it, it's Western brand Apple wood, and they're chips.  I prefer chunks but this is what they had a Kroger. The apple wood smells wonderful in this product, though!

    That's the problem with an ECB.

    You have to babysit it.

    A little work, but it will produce great Q.

  10. Phase 2 in the 3-2-1 method.

    Putting the ribs in foil with some apple juice.

  11. Phase 3: The final countdown!

    Last hour, foil unwrapping.

    Tending the fire, and some note of the Brinkmann mods.

    Also, my wife got a butt shot.  Sheesh.

    Actually pretty funny.

    Gonna be eatin' soon!

  14. I'm right there eating them with you.  Are you happy with the 3-2-1 method or would you like to try 2-2-1?
