I'm doing my 2nd smoke today with 3 racks of baby back ribs I got at my local meat shop.  I'm a little concerned about how thick 1/2 of the racks are.  I was planning on doing a 2-2-1 method but now I'm not sure.  I will be cutting them in half to separate the thicker sides from the thinner. Does anyone have any advice on best practices ?

Hello.  If half are that much thicker, put the thicker ribs on about 1/2 hour before the other half and then continue with the 2-2-1 method from when the last ribs went into the smoker.  Just a guess as I can't see the ribs.  If by some chance those ribs are monsters and you think 1/2 hour ain't enuff, 45 mins.- 1 hr?  You got this!  It ain't rocket science and your instincts are probably right.  I see no safety issues here so now is the time to experiment my friend.  Good luck.  Remember the Qview.  Keep Smokin!

Ok they're on their way!  I put the thicker sections lower and about 30 min earlier.  I'm gonna do a 2-1.5-1 and  I'm trying 3 variations of rub.  I am most excited to try 1 that I added a bit of coffee to the rub on..  should have taken a few pics before they went on but I will remember

Are your baby backs this thick?

2-2-1 refers to 2 hours on the grill, two hours wrapped in foil with liquid of your choice (I used red wine) and 1 hour on the grill to sauce if you like.

I usually do mine 2 hours 15 minutes, foil for 2 hours 15 minutes, then 15 minutes meat side down to sauce and then meat side up for the last 15 minutes. This will give you fall off the bone ribs!
