Venison summer sausage

My neighbor had 7 pounds of ground venison in his freezer from last year. He asked if we could do anything with it since he and his wife didn't like the flavor of it.

Well, I took it from him of course, and told him that he would love the taste after I finished with it.

I added 3 pounds of pork belly trimmings to the meat and then split it into 2 5-pound piles of meat mixture.

The first 5-pounds was made with my normal SS recipe and the other meat was made with the normal seasonings, plus the addition of pepper corns, mustard seed, and hi-temp cheddar. Sat overnight in the frig, hitting the smoke in 3,2,1....

Once it's done, I plan to take him 2 sticks of each, to change his mind about not liking ground venison.

See that small loop of casing? I stuffed it with the remnants of the regular and peppered SS meat. It's a SS snack stick!

Looks good so far. My neighbor use to give me venison since him and his wife didn't like it. I fixed some for them and invited them over for dinner. He hasn't given me any since and he kills a couple of deer every year.

LMAO, that will happen  to Cranky if he shows his neighbor how good the stuff is ! Nice sausage Cranky !
 
Sorry for the late update! This time of year I'm quite busy in the kitchen...

So, I made the SS like I usually do, and then sliced a little up, vac packed it along with some smoked cheddar, and then delivered it next door....


Per Nate; "I'll get another deer this coming weekend, can we make more of this?" Even his wife likes it!

I told him I'd split the sausages with him this trip and then we could work together on the next batch. He said keep what I made and we'd split the next batch!:xrocker:

Sure. Looking back at my notes, this is what I had for that batch.

3 pounds venison
2 pounds pork butt

50g kosher salt
5.5g Cure #1
20g dextrose (corn sugar)
6gWhite pepper ground
1 Tbs whole pepper corns
4g coriander ground
1 Tbs whole mustard seeds
2g allspice
6g garlic ground with meat
1/2 cup NFDM
225g hi-temp cheddar cubed
 
Looks good enough to eat if you ask me!!!
