Venison Snack Sticks (wayyyyy to long to cook em) 13 1/2 hrs

    ok.. So I made up 10 lbs worth of venison sticks.... 7 1/2 lbs venison, 2 1/12 lbs of boston butts mixed in... I also made 10 lbs of straight pork snack sticks....

    I used this method in my smokehouse.... .
    2 hrs @ 120` and then raised it 10` every hour to a max of 170` .... smoke after the 2 hr mark ...

    The pork took the usual 8 hrs or so.. maybe 8 1/2 .... to reach the 152`- 155` IT...

    The venison was only at 130` -135` ... so I raised temp to 180` and let it set there....

    This is where I'm at now... 10 1/2 hrs and only @ 142` - 145` .... WTF ...

    was suppose to go over to wife's son's house for steak dinner tonight... but the damn sticks aint done yet....

    "ANY IDEAS" ?

    Venison in the back... 2 rows of the pork in front of it....

    That is a long time. The sticks should jump up fast now at 180.

    Update.... 11 1/2 hours... still running smokehouse @ 180 ish ...



    NO CHANGE.... still 142` - 145` .... about ready to say the hell with it and pull em.....

    I use the same method as far as changing the temps. Last two batches of sticks took 11-12 hours, not sure why but it is frustrating for a small stick to take that long.

    Update.... 12 1/2 hrs... still 180`ish cooking temp (with a freshly calibrated Mav ET732)

    IT.... STILL 142`-145` ... checking with a freshly calibrated Thermapen instant read ....

    Should never take that long for snack sticks.

    after 13 1/ 2 hrs they are finally done (close enough)... as usual with any smoke.... never plan on doing anything besides tending to the smoker... missed the steak dinner... the wife brought home a cold plate (better than nothing)....
