Venison Slim Jimz

    Got into a bag of venison, trimmed and got a tad over 6 1/4 lbs

    Got a medium grind going.

    Fine

    Fat is cut in and another fine.

    4 lbs here

    4 here

    [​IMG]

    8 lbs total. Bag and fridge 4 while i mix 4

    4 lbs of hot.

    4 lbs of Teriyaki

    No time for stuffing, smoking so will do tomorrow. I think i will cut some ECA into the hot tomorrow.

    Did the Teriyaki first.

    Used up some clear smoked 20mm also.

    Well Rick your sticks look good but your smoker looks.............I don't know there's something wrong with it....................IT"S TOO CLEAN.

    I spray painted the inside black with high heat Krylon BBQ spray and texture paint.......[​IMG]

    My sticks always shrivel 3 times as much as that.  whats the trick to keep them looking full?  I have tried ice water bath with no different results....and always hang them to bloom.?????
