put it in my mes at 11:30 at 225. didn't bother to check it until about a 1:30. dang, kinda shocked me, it was already at 149. i turned it off. think;ing maybe i have the probe in wrong location. cut me a little sampler. it taste great with that kinda red rare look. does this time frame sound right on a venison shoulder.  if so can i just wrap in alum foil and leave out til dinner around 5. any help appreciated. jb

It could be right depending on the size of the deer. I would wrap in foil then put in a ice chest filled with towels to hold.

Happy smoken.
