Venison Pizza/Cheese Stix

    Have 5 lbs of venison ready to mix.

    Going with AC OP Mix. 1 cup cold filtered water with 1 level tsp cure #1

    Got my cheese Mozzarella cubed 1/8 x 1/8, 3/4 cup.

    This is what i use to cube the cheese in mini cubes.

    Better for stix.

    All mixed and ready for stuffing.

    Using my LEM today and clear 20mm collagen.

    Ready for smoke.

    AMZNPS Getting some flame.

    In the 6 rack smoking away.

    The nacho cheese sticks are on the rack

    what is that white thing that made the "mini cubes" ?
    how it work and were can you buy one ?

    This one is the minidicer 1/8 my other is the 1/4

    Both are made by Genius and i bought them at the Kitchen Collection which are located in most outlet malls.

    You just place your food on the inside and push the top down.

    Great little chopper Rick - Kitchen collection is closing a lot of stores. I am going to miss them 

    Is that mix some of the stuff your daughter sent ?
