Cleaned out the freezer over the weekend, Had a few deer hams.....

I ground them with some pork fat,

Added cure,and AC Leggs cajun seasoning(not very spicy for cajun style)But it has a good flavor.

 covered and into the fridge over nite

For venison, This is very moist and juicy!

And the casing has a very nice pop, Must be due to the long smoke.

That did it now I am longing for more venison sausage.  Gonna have to get into the freezer and make some more sausage as soon as I get these graduations and weddings out of the way.

Those sausage look great !!!!! Nice job. I have about 150lbs of ground venison in my freezer from this past deer season...Gona put to good use .
 
Looks Like some great sausage. I have a 15 lb batch of venison/ turkey/pork Kielbasa in the fridge right now.Will be stuffing it tonite and Smoking tomorrow.
