Venison/Beef snack sticks with qview

  1. Processed about 15 pounds of sausage yesterday... I'll let the pics tell the story.

    Beef scrap from the butcher down the road


    Put the wife to work


    Bring on the venison


    Used a kit for the first 10 pounds and snuck in jalepeno & cheddar, then last 5 pounds with Gersus' recipe he posted a week ago.  Thanks Gersus!!!


    Can't wait to build a smokehouse this summer.. but for now I had to ghetto rig my weber.

    Now thats some fine looking sausages that you have there. I really like your hanging invention too.

Thanks guys!  Yeah I was impressed - for my first attempt they were very good.  Make that nice "snap" noise when you bite into them, just like the snacksticks the butcher makes.  I used the kitchenaid grinder attachment to stuff the sausages - it is brutally slow, so I'm thinking about getting the 5 lb stuffer from LEM.  Seems like a good starter unit.  I was literally losing sleep about how I could try to smoke them and get the right temp - but I found that roasting pan/bracket got the job done.

    Sticks look great.  Hope there's some left for the next time we get together.  Looks like a good way to spend a Sunday with the Pack not playing.

    I have a kitchenaid mixer. Always wondered if the grinding attachment would be worth buying.

    Yes it is!  I used mine for several years before I could afford to get a larger grinder, it actually grinds very well.  Stuffing is difficult, an inexpensive 5 lb. stuffer is well worth the investment.
