Was just wondering if anyone has ever tried to vacuum seal a piece of meat or food that had a small instant read thermometer pre positioned into the food before sous vide cooking? o_O
 
The thing i would be concerned about personally is peircing the meat with the probe then letting it sit in the danger zone for that long.. not exactly sure as i dont SV cook
 
I think you would find the meat would be the same temp as the water after a few hours.
It would be a good experiment!

I commonly hear about SV cooks spanning 30 to 40 hours.. does the meat take that long to reach its finished temp? Or does it reach the preset water temp quickly and just sit in the water bath at temp for an extended period of time?
