Using the GOSM to make Snack sticks

Hello fellas,

Just a quick question.
 

I have a GOSM set up for gas. Now this weekend I was going to smoke some snack sticks in there. Now, I do not think I can keep my temps down enough in there so I don't ruin them... Do we think it is wise if I keep the gas off and I make a pan of lump charcoal to keep it cool enough and smoke with the lump???

Any and all help would be greatly appreciated!

I thought I posted this alittle while ago. Oh well what you need to do is go to Walgreen's and get you a single hot plate and then you can run you Gosm as low as 80° and still make smoke. I do it all the time. Now the hot plates are 9.99 and you have to put the chunks right on the burners so you might have a small fire like I did too. I just went out and bought another one. Otherwise I can't get that low either. It takes alot more heat to use a pan on the burner. Now I do use a pan after the first couple of hours and I can let it go over 110°or so.

Mark, you beat me to it.

I use a hot plate with a small dutch oven and foil the wood place inside the dutch oven put the lid on and it will smoke for hours and can achieve much lower temps than using gas, depending on the weather of course.

I use this when making jerky.
