I piled some lump in the bottom of the clean egg, started a half a chimney of lump then dumped it it. Temp went to 300, after dialing the bottom down a bit were stable at 250 or so.

Question, I layed my Igrill probe on the grill next to the slabs. The temp on the thermometer on the dome shows a lil over 200, If i was aiming for 225, what temp would you believe????

Have never cooked on an egg, but I would believe the Igrill thermometer more.  Also, the two thermometers are sampling 2 different locations, 1 on the grill (closer to the heat source), 1 on the dome so probably some difference in temperatures.

I to have never cooked on an egg. My wife won a large BGE at the casino a few weeks back. It was delivered last Friday. Finished putting it to gather today. I still have all my old relieable smokers. I will be watching you post close, just so as I can learn something. CF
 
The egg thermometer was 50 degrees off. After the cook I calibrated it in boiling water. It read 155.lol
