they were on sale so i had to buy them
what should i expect?
Not pink/red colour
I am not sure what that is and never heard of it...Maybe a Pic of the label? There is Corned Beef, but Uncured Corned Beef is just Beef Brisket. It is possible that it is No Nitrite Added Corned Beef, but check the ingredient list, it would say Cured with Salt and Celery Juice or Extract. Celery Juice contains Nitrate that get converted to Nitrite during the Curing process with the same result. The last possibility is it is Brisket cured with Salt Only but that has not been common for many decades...JJ

Our Trader Joes carries a brand called "All Natural". Here is what they have to say about it:
"Our Uncured Sliced Corned Beef is crafted for us the old fashioned way, using spices and seasonings like garlic, onion, cloves, coriander, dill, allspice, and pepper. No nitrites or nitrates are used to cure and preserve the meat; rather, our Corned Beef is treated with sea salt, vinegar, celery powder, and cherry powder. This produces intensely flavored meat that is lower in sodium (and less salty tasting) than most commercially produced corned beef."
Our Whole Foods brines their own not using any cures, they call it browning. They also carry a brand called Wellshire Farms or something like that. They use beets, and spices but not cure.
Beet Juice/Powder contain a high level of Nitrates as well and is used like Celery Juice. Sounds like a No Added Nitrite Corned Beef and will look, cook and taste like the standard cured Corned Beef. Those are marketed to folks that think they have no Chemical Nitrite so they are Better For You, In Reality the processing is not easily controlled and the meat can easily end up containing MORE Nitrite that what is standard or even necessary. All that and they get to charge a Premium to fake folks out. Have fun with the cook. You can add your fav rub and smoke it or make Pastrami...JJ

Beet and Celery Juice, has Nitrate. Since studies show it has caused cancer in animals. Without going into all the science, an Antioxidant, acid, added to the meat will eliminate the negative issues and speeds the cure time. So adding Vinegar, Citric Acid, Ascorbic Acid is a common practice when using Nitrate...JJ
