ok Ive been wanting to try a coffee rub of some sorts. So I adapted this rub and put it on a pork belly ( yup im very unconventional lol) i deleted the paprika and cayenne and replaced the fine pepper with coffee and replaced the granulated sugar with maple powder. I also used EVOO for the base binder and rubbed a tad of brown sugar and fine pepper on before i sprinkled on the rub.

My last batch of jerky is in now and this will go low and slow late into the night lol

I cooked this belly to the IT of 145 then sliced it and put it on the flat griddle for a couple minutes each side then cubed it up and cooked for another few minutes on the griddle. I then mixed it up in the pan with some BBQ sauce added a bit more BBQ and sprinkled a bit more coffee mixed and back in the smoker for another couple hours. It was very good and after all the different things and cooking it still had the hint of coffee. Not sure when/if ill do it again but the family loved it so its a win for me and just one more option to change things up.
