I've used the 8 x 18 bags for making pancetta but need to reorder more bags. I'd like to make some other salumi and am curious about the 10 x 11 bag they offer. It seems like the length of 11 inches is quite short. Does anyone have experience with that size? What is this size appropriate for?  Thanks

They make bags for sausage sizes.
 
They're a one way semi-permeable plastic. Moisture can leave but not come back. Not an easy product to produce.
moisture in form of gas molecule can exit.. But oxygen can not enter? I'm curious to see the FDA findings on the safety of these compounds that make up this product. It does seem complex to be just developed and approved and not tested 10 years .. or has it been tested a decade? I never seen it until the past 3 years. . Hmm.. I think the air aged or salt bed with air dried method is just to much work for people.. so some company developed a way to mimick this to get rich quick. Lol

A very good friend of mine is a PhD chemist who specializes in plastics. I'll ask his opinion on these bags. His opinion on "BPA free" plastics is that it's pure marketing.

Either way, I'm going to continue using them!
